Golden Cadillac Cookie Shakes

 It's the holidays and I can't remember a single holiday growing up that we didn't have Golden Cadillacs. I always remember my grandparents making these cocktails. Here is my version, my Golden Cadillac Cookie Shakes. The cookies are a pretzel shortbread cookie dipped in chocolate ganache and topped with crushed pretzels served with a golden cadillac shake. These are decadent and delicious! Enjoy! 

 

 

Golden Cadillac Cookie Shakes

(Pretzel Shortbread Cookies dipped in Chocolate Ganache & Crushed Pretzels served in a Golden Cadillac Shake) 

 

COOKIE INGREDIENTS- 

 

1 stick butter, softened

1/3 cup sugar

1 teaspoon vanilla 

3 teaspoons heavy cream

1 teaspoon Galliano (sweet herbal liqueur)

1 teaspoon White Creme de Cocoa (chocolate liqueur) 

8 ounce pretzels, finely ground 

2 tablespoons cornstarch

 

PREPARATION-

 

Preheat oven to 325 degrees.

 

Cream butter and sugar together, then add in vanilla, cream, Galliano and Creme de Cocoa. 

 

Sift the finely ground pretzels into a bowl until your have 1 cup of sifted pretzels and 1 cup remaining of larger pretzel pieces. Set larger crushed pretzel pieces aside for garnishing. 

 

Add sifted pretzels and corn starch to the creamed butter mixture and mix well. 

 

Roll mixture into a ball and refrigerate for 20-30 minutes. 

 

Using a well-floured rolling pin, roll out the shortbread mixture until approximately 1/4" thick. Using a small biscuit cutter cut small rounds, then using a knife cut out a small triangle to make a pacmac shape or major sector shape. Place the pacman shaped pieces on baking sheet. Add the triangle pieces back into the dough and continue to roll out until all dough is used. 

 

Bake for 9-11 minutes. (I like to bake on the bottom shelf for 5 minutes and top shelf for 5 minutes) Remove and let cool completely before removing from pan. 

 

For Chocolate Ganache-

1 cup semi-sweet chocolate

1/2 cup heavy cream

 

Crushed pretzels

 

Add chocolate to a medium size bowl. In a small saucepan, bring cream to a slow boil, then pour over the chips and let sit for 5 minutes. Then whisk chocolate and cream together to make the chocolate ganache. Dip the shortbread cookies into the mixture and sprinkle on some crushed pretzels. Let cool. (You’ll have extra ganache leftover, refrigerate then make truffles with remainder. Simply roll a small amount of ganache then roll in crushed pretzels)

 

For the Golden Cadillac Shakes-

1 ounce Galliano 

1 ounce White Creme de Cocoa

2 cups vanilla ice cream

2 pretzel shortbread cookies, crushed 

Chocolate syrup for drizzling inside the glasses 

 

 

Blend Galliano, Creme de Cocao, ice cream and crumbled cookies together. Drizzle inside glasses with the chocolate syrup then pour in the ice cream. Top each shake with a Golden Cadillac Cookie and serve. 

 

Makes approx 18 cookies and 2 shakes
