Cherry Pistachio Snowball Cookies



Join me on Monday, December 14th for The Kitchen 2 Kitchen Christmas Cookie-Thon. The TODAY Show with Hoda & Jenna will kick off the Cookie-Thon on their 10am hour with several bakers. Make sure to tune in to the 4th hour of The TODAY Show with Hoda & Jenna. I'll be one of the featured bakers on their virtual wall kicking off this festive morning of baking and raising money for Operation Yellow Ribbon.





Cherry Pistachio Snowball Cookies

(3 dozen)


1 cup (2 sticks) softened butter

1 cup powdered sugar, plus extra for rolling cookies

2 teaspoons vanilla extract

1 tablespoon almond extract

2 1/4 cups flour

1/2 teaspoon salt

2 cups chopped pistachios (unsalted and shelled)

1/4 cup chopped dried tart cherries

1/4 cup drained, stemmed and chopped maraschino cherries



Preheat oven to 375°F.


In a medium bowl, cream butter and sugar together until fluffy. Add vanilla and almond extract.


Add flour, salt and pistachios to the mixture and gently mix until thoroughly combined. Then fold in cherries. Don’t overmix the dough.


Line a baking sheet with parchment paper. Shape dough into 1-inch ball and place on baking sheet, keeping at least 1 inch apart. Bake for 14-16 minutes. Cool for 5 minutes, then roll each ball in powdered sugar. Let balls completely cool, then roll one more time in powdered sugar.

The Kitchen 2 Kitchen Christmas Cookie-Thon is a live marathon of baking, featuring celebrities, chefs, and influencers. The goal is to make 10,000 cookies and raise money to support Operation Yellow Ribbon. The Cookie-Thon is an extension of the daytime talk show, Kitchen 2 Kitchen, hosted by Jessica D’Ambra, Dina Deleasa-Gonsar, and Chetna Macwan, which airs on NJ on Air, ChristmasFlix and on TV in New Jersey and New York. The Cookie-Thon is being produced by On Air Media, a streaming TV and television production company. The Cookie-Thon production is 100-percent volunteer and all money raised goes directly to Operation Yellow Ribbon.


HOST OF COOKIE-THON: Jessica D’Ambra is a mom, wife, home baker, TV host and entrepreneur. She is the co-host of the talk show Kitchen 2 Kitchen, as well as the Host of two baking shows, Christmas At Home and Jessica’s Test Kitchen. Jessica has been on the Rachael Ray Show, and can also been seen doing local baking segments on ABC 6 Philly, News 12 New Jersey, News 12 Plus, and the CW15.
