Happy 1st day of spring! Who's ready for sunshine, flowers and asparagus? Asparagus is my favorite spring vegetable! One of the first things I like to make in the spring is my Asparagus Spring Salad in Parmesan Cheese Cups.
Our lake is just starting to open up and the eagles are in full mode. When our lake is frozen, we see lots of ice fishermen out everyday. Then when the lake starts to thaw, we see bald eagles everywhere. The eagles love it when the lake is half frozen and half open. They like to hang on the ice in the middle of the lake and grab fish from the open water. It's always the first sign that warm weather is right around the corner.
