Join me tonight at the Hart Area Library for a book signing and cooking demonstration. I'll be making my Focaccia Sammies with a Pistachio Pesto. It starts at 6:30 pm EST. I will have books for sale, $35 plus tax.
18 oz loaf focaccia bread
2 cups fresh basil leaves
2 tablespoons pistachio nuts
2 garlic cloves
½ cup olive oil
½ cup grated parmesan
Optional- salt and lemon pepper seasoning
Sliced deli meats and cheeses
Add all of the ingredients for the pesto into a food processor and process until well blended. Set aside.
Cut focaccia in half horizontally.
Spread a thin layer of pesto over the cut sides of the bread. Layer meat on focaccia bottom, then add some cheese slices. Replace focaccia top and cut into desired slices.
