Heluva Good! Jalapeño Cheddar Potato Bites

Looking for the perfect appetizer for the big game? Look no further! I have some great party bites for you and they're so easy to make. They are my Loaded Potato Bites, using Heluva Good! Dips in the filling. I've used the Jalapeño Cheddar Dip for this recipe, but feel free to use any Heluva Good! Dips for this recipe. Try the French Onion Dip or the Bacon Horseradish Dip in this recipe. I'm making all 3 of them for my party. It'll be a Heluva Good! time (I promise)!

Heluva Good! Dips are found in the dairy aisle of the supermarket

They are made with real sour cream and flavorful spices – with flavors including French Onion, Bacon Horseradish and Jalapeno Cheddar

They pair great with chips, but you can also use them as a fun spread on burgers

In the Grand Rapid area, Heluva Good! is available at your nearest Meijer, D&W, and Family Fare Supermarkets

These dips are a crowd pleaser and are easy to serve at any Game Day party. Pair them with ridged potato chips or your favorite dippables, including veggies, pretzels and tortilla chips.

Heluva Good! Jalapeño Cheddar Potato Bites

Potatoes

3 lbs baby yukon gold potatoes

Potato Filling

1/2 cup Heluva Good! Jalapeño Cheddar dip

2 tablespoons chopped scallions

1/4 teaspoon salt

1 cup shredded cheddar cheese, divided use

Preheat oven to 400ºF. Line a large baking sheet with aluminum foil.

PREPARE POTATOES

Wash and dry potatoes. Place potatoes on baking sheet. Bake for 25-35 minutes, or until fork tender.

MAKE POTATO FILLING

Combine dip, scallions, salt and 1/2 cup of cheese in a medium-size bowl. Refrigerate until ready to assemble.

ASSEMBLE

Cut each potato in half, then cut the ends off each half so the potato bite will stand straight up. Scoop out some potato from each half (I use a melon baller) to form a well, then mash the excess potato in a small bowl. Add the mashed potato to the potato-filling mixture and spoon the mixture back into the potato bites. Place potato bites on baking sheet, sprinkle with remaining cheese. Bake for another 5 -10 minutes, or until cheese is thoroughly melted.
