Pepper-Crusted Beef Ragu over Zucchini Ribbons

Beef Ragu using PRE Beef over Zucchini Noodles

There's a new beef in town and I want to take a moment to tell you all about it. The company is Pre® Brands. It is a Chicago-based premium fresh food startup and they call themselves “Beef Geeks” because they’re obsessed with the details of what makes the beef experience the very best, every time. You've probably seen it, recently, in and around West Michigan. It can be found at Meijer, D&W Fresh Market, Family Fare and many other independent grocery stores. (And the fastest way to get your hands on it would be to order Pre through these stores' delivery services, Shipt and the Fast Lane.)

Tune into WZZM 13 on Wednesday, January 24th between 9-10 am. I will be talking all about this Pepper-Crusted Beef Ragu using Pre chuck roast. We now know the teams going into the Super Bowl and it's the perfect time for you to plan your game day menu. I will show you on My West Michigan how to elevate your game day food using Pre Brands. (Want an inside peek on the tv segment, then make sure you are following me on Instagram. I will be doing plenty of Instagram stories as I prep for the tv segment, at the tv station and afterwards I will take you into a local store and show you where the Pre Brands are located. So, make sure you're following me @ginaferwerda.)

So what's different with Pre beef? It's 100% grass-fed AND finished, with no added antibiotics or added hormones. And the beef is sourced from nutrient-rich pastures. Pre is high in Omega-3's and CLA's.

I love the transparency on the Pre packaging. I can see the entire piece of beef before I make my purchase. Have you ever bought some meat, took it home and then took it out of the package only to find the underside less than desirable? I know I have! I recently purchased some Filet Mignon steaks that should have been trimmed. But since I couldn't see the underside of the steak, I didn't find that out until I was at home ready to grill. Let's just say that I wasn't very happy. That's why I love the transparency of Pre's packaging. They are individually packaged steaks (Ribeye, New York Strip, Top Sirloin and Filet Mignon), ground beef, hamburger patties and chuck roast. Pre® products are sold offline and online across the continental U.S. You can trust beef from beef geeks.

Another cool thing is Pre Brands products are Whole30 Approved, Certified Paleo and Keto. Compared to other beef, Pre contains:

Up to 38% fewer Calories*

Up to 63% less Fat*

Higher Omega 3s

Higher CLA’s

*vs. USDA choice version for the same cut of beef

Again, you can grab your Pre beef before game day at Meijer, D&W Fresh Market, Family Fare and other independent grocery stores in the West Michigan area. But if you’d rather purchase from your living room, you can do that too – they are even offering a discount of $15 off purchases of $100 or more, check out the link below!

Pepper-Crusted Beef Ragu over Zucchini Ribbons

Serves 6 to 8

1 PRE chuck roast, cut into 1" cubes (1 1/2 pounds)

1 teaspoon crushed black peppercorn

2 teaspoons salt, divided use

2 tablespoons olive oil

1 tablespoon soy sauce (hardwood smoked soy sauce, is preferred)

RAGU

1 cup chopped onion

3 cloves garlic, minced

¾ cup diced celery

¾ cup diced carrots

½ cup diced bell peppers

1 (6-ounce) can tomato paste

1 (28-ounce) can diced tomatoes

3 cups beef stock

2 bay leaves

1½ teaspoons chopped fresh thyme leaves

4 small to medium size zucchinis

GARNISH

Freshly grated Parmesan cheese

Ricotta

Fresh basil leaves

Evenly coat cubed meat with crushed peppercorn and 1 teaspoon of salt.

PREPARE BEEF

In a large stockpot or Dutch oven, heat oil over medium-high heat. Add the seasoned meat and brown all sides, about 3 to 4 minutes per side. Using a slotted spoon, remove meat and place in a bowl.

MAKE RAGU

Add onions to stockpot and cook until translucent, about 4 to 5 minutes. Add garlic, celery, carrots and peppers, and cook for 4 to 5 minutes.

Add meat back to stockpot, then stir in tomato paste. Stir in beef stock and bring to a simmer. Add bay leaves, thyme and remaining salt. Cover and reduce heat to low for 2 to 3 hours, or until meat is fork-tender.

PREPARE ZUCCHINI

Cut ends off zucchini. Slice zucchini into long, thin ribbons using a mandolin or vegetable peeler. Set aside until ready to assemble.

ASSEMBLE

Remove bay leaves, then fold zucchini into meat sauce. Top each serving with Parmesan cheese, a dollop of ricotta and fresh basil leaves. Serve warm.

OPTIONAL- Add Beef Ragu to a slow cooker for a BIG GAME BEEF RAGU BAR -

This is a great for game day. Once the Beef Ragu is fork tender, add to a slow cooker (without the zucchini ribbons) and keep warm. Add zucchini ribbons in a bowl, alongside some cooked al dente pappardelle noodles in another bowl. Let your guests decide if they want to add their ragu to zucchini or pasta, it's good either way. This is my elevated version of a typical game day chili. Add all the extra accompaniments that you would normally add to a game day chili bar. I add black olives, fresh tomatoes, avocado and red onions alongside the zucchini ribbons, pappardelle noodles, ricotta, parmesan and basil.

NOTE

I use a Hardwood Smoked Soy Sauce for this recipe. It adds a great smoky flavor and depth to this dish.
