Happy Mother's Day - Michigan Asparagus

It's Asparagus season in Michigan right now and I'm so excited! I live in Oceana County in West Michigan. Oceana County is known as the "The Asparagus Capital of the Nation" and produces two-thirds of the asparagus that is grown in Michigan. Michigan asparagus is not only delicious, but very nutritious as well. It is low in calories, only 20 per 5.3 ounce serving, less than 4 calories per spear. It contains no fat or cholesterol and very low in sodium. It is a good source of potassium, fiber, thiamin, vitamin B6, rutin and glutathione. One of the most important health benefits of asparagus? It is high in folic acid. A 5.3 ounce serving provides 60 percent of the recommended daily allowance for folacin, which is necessary for blood cell formation, growth, and prevention of liver disease. It's not only tasty, it's also good for you.

Michigan Asparagus

Asparagus & Havarti Dill Sheet Pan Eggs

12 eggs

1 cup milk

1 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon granulated garlic

1/4 teaspoon dill weed

5 fresh Michigan asparagus spears

1 cup shredded havarti dill cheese

Fresh salsa or hot sauce for garnish

Preheat oven to 325°-F. Liberally spray a quarter-sheet (9-by-13) baking pan with non-stick spray. Double the recipe if using a half-sheet pan (18-by-13).

Whisk eggs, milk, salt, pepper, garlic and dill together in a large bowl. Pour egg mixture onto baking sheet.

Using a vegetable peeler, shave asparagus spears into thin ribbons. Evenly distribute the shaved asparagus and shredded cheese on top of egg mixture.

Bake at 325 degrees for 20-30 minutes (depending on the number of toppings), or until no longer runny.

Let set for 5 minutes and then cut into desired shapes and sizes. Serve hot with some fresh salsa or hot sauce.

To make this into an egg sandwich, simply cut the eggs into the same size of the bread that you are using. Cut eggs into round shapes for english muffins or bagels or a narrow rectangle if you are adding it to avocado toast. Avocado recipe is below. Enjoy!

Optional ingredients:

Add moms favorite ingredients into this dish. Feel free to add some cooked meats like ham, bacon or sausage. Add additional vegetables or different cheeses. These sheet pan eggs can be a blank canvas, simply add your family’s favorite ingredients and bake.

Let the kids get involved and use cookie cutters to cut out eggs for unique shapes and sizes.

Avocado for toast-

2 ripe avocados, peeled and seeded

Juice of 1 lime

1 teaspoon lemon pepper seasoning

Drizzle of sriracha or a pinch of sriracha seasoning

Scoop avocado out and mash with a fork. Gently fold in the lime juice and seasonings. Add to toast, then top with some sheet pan eggs.

Easy DIY projects for Mother's Day gifts

Mother's Day Segment - Food & DIY Projects

Here are two DIY projects that are quick, easy and inexpensive to make mom for Mother's Day. Both of these are gifts from my daughter, Ariana. The first one is Notes For Mom in a Mason Jar. This is super easy to make. Take some paper and cut into small pieces. On each piece, write something that you love about your mother. Fold each piece in half and place inside the mason jar. On the inside of the lid, write "Things I love about you". Place the lid on the mason jar and add some ribbon. This is, by far, my favorite gift that I have ever received on Mother's Day because it is something I will cherish forever. I love to go and re-read these notes from her, very sentimental.

Another DIY idea is to make a Mother's Day Frame that spells out MOTHER. Take an 8x10 sheet of paper and buy some stick-on letters at any craft store. Spell out AMAZING, LOVING, STRONG, HAPPY, SELFLESS AND GRACEFUL (horizontally) and keep the word MOTHER together in a vertical line. You can mix and match different words to describe your own mother. This is the one that my daughter, Ariana, made for me. Place in a 11x14 frame.
