Peanut Butter Pumpkin Cheesecake Bars


Fall is a great time of the year to get in your kitchen and bake. I love cheesecake, so I like to experiment with different cheesecake flavors. Here's my Peanut Butter Pumpkin Cheesecake Bars. Of course pumpkin flavor because it's fall and it's pumpkin everything, this time of year. But, we love peanut butter in our family so I tried making peanut butter and pumpkin cheesecake bars and they were a hit! This recipe has regular sugar and brown sugar, but you can use a sugar substitute if you want to cut out some of the calories. Check out my video on how I make these!

Peanut Butter Pumpkin Cheesecake Bars

Ingredients-

For the crust:

1 1/2 cups finely ground chocolate graham crackers

2 tablespoons sugar

1/3 cups melted butter

For the filling:

8 ounces softened cream cheese

1 cup canned or fresh pumpkin

1/4 cup sour cream

1/3 cup peanut butter

2 eggs

2 teaspoon vanilla extract

1 cup brown sugar

2 teaspoons pumpkin pie spice

1/2 cup flour

Hot fudge

Walnuts or pecans

Directions-

Pre-heat oven to 350 degrees. Spray an 8x8 or 9x9 pan with non-stick spray.

Add graham crackers, sugar and butter in a bowl and mix well. Press mixture into the bottom of the sprayed pan and bake for 8-10 minutes. Remove form heat and set aside.

Using a stand mixer or hand held mixer, mix together all the ingredients for the filling. Pour the filling over the crust and bake for 35-40 or until a toothpick comes clean.

Add some hot fudge and nuts to garnish. Enjoy!
